тут ещё время варки, конечно: осьминога надо варить или очень быстро, или, напротив, достаточно долго. иначе будет резиновый. Я варю долго, так как охлаждённые щупальца осьминога явно не сегодняшний улов. Да и проще так. И бульон наваристее :)
